There isn't that much organized mountain biking activity yet in Las Vegas - like trail running, groups and races are starting to gel into full-fledged seasons. The Southern Nevada Mountain Bike Association is new, and should be a great resource in the future.
What Las Vegas does have is lots of places to ride your mountain bike. With Red Rocks and Bootleg Canyon being two favorites close to town, the Bristlecone Trail on Mount Charleston as a good option in the summer, you have a lot to ride. For more of a touring adventure (not singletrack), head out on the River Mountains Loop Trail southeast of Vegas.

You can rent mountain bikes from Las Vegas Cyclery. They rent FSR and Ellsworth mountain bikes. Bring your own pedals and shoes if you ride clipless. They'll also organize guided tours if you don't have a rental car - they'll pick you up from your hotel.
Another great option is to rent mountain bikes from McGhie's Blue Diamond out by the Cottonwood trails. You can ride from the store right onto the trails, so it's perfect if you don't have your own transportation (you can take a cab to Blue Diamond, but it will be pricy, it's 20 miles from the Strip) or if you have a rental car that doesn't have a bike rack.
